Back then, they used to age beef until it would have mold growing on it. My Dad told me he would see it all the time at restaurants he worked at in NYC. He has never once suggested that I try to age beef, btw. Lol.


Yeah. Butcher was a close friend of my granddad, all meat cooked in my house until the late 90s came out of his shop. Had a window into the aging room where you could see all the moldy meat.
