Pizza fritta is fried, so no, I don't mean that. I'm sure it's great, but I mean traditional neapolitan pizza. The dough is made from just flour, water, yeast (preferably italian sourdough), and salt. The flour is 00 Italian. The pizza is cooked in a 900°+ wood-fired oven for 1-2 minutes. The sauce is mostly just crushed tomatoes and there are only a few high-quality toppings on it.
