Yeah I have some chemicals to add tomorrow. It's been three days with the s.g. below 1.000 and above .99 so its time. Then its a week to de-gas and then sweeten with the conditioner I bought which has something to prevent in bottle re-fermenting. From what I can tell its going to taste a lot like a wine I used to buy at a local winery called Hound Dog Red. Tart with a hint of sweetness which is what I like. Unfortunately the winery owner died and they went under or this wouldn't be necessary. Its been fun doing though. I already have a raspberry zinfandel kit to start after this one.
