I just grilled the tastiest damned chicken. I pounded a boneless/skinless chicken breast out to an even 3/4" thickness and marinated it with: fresh ground pepper, cayenne, some kind of chipotle spice rub, some olive oil and a few splashes of champagne vinegar. Then 4 minutes per side on a 1000° grill, changing the grilling angle once on each side to get the classic cross-grill marks. I put almost no effort into this and it turned out awesome.
