I use French's cheap yellow mustard whenever I make any kind of BBQ'ed meat. First the mustard goes on and then the spice rub. As the meat cooks low & slow, the mustard melts away and leaves the spice rub behind intact.

You being the meat cooking guy here, do you have any tips how to really make stuff crispy, juicy and tender all at once? Chicken breast, for example, fried in a pan almost as if it came out of a deep fryer - that is where it gets interesting.

For chicken breast, brine it in a mixture of kosher salt & brown sugar for an hour. Pound it down until it's evenly thin, dip it in egg wash & flour and then fry it in a pan like schnitzel. Instead of pounding it flat, you could also cut it into thick strips (chicken fingers). Maybe use panko breadcrumbs instead of flour to make it even more crispy.

A basic brine ratio is:
1 gallon water
3/4 cup kosher salt
2/3 cup sugar

But brine it first, like I said. And try to ignore all the references the chef makes to him new cell phone. The honey mustard sauce recipe that he has a link to is also really good.

The spice rubs I came across mostly were char after the steak or whatever reached the desired level of crispness. Eating meat which is partially raw never fascinated me. It could have been the lack of preparation; the quality seems to be good to really good organic meat and poultry, leading me not to buy it that often.

If you brine the chicken breasts, rinse them off well under cold water afterwards. And cut way back on the salt when you season the meat. The brine makes it salty enough.

A store brand horseradish/ mustard, plain yellow, 3 or 4 Hickory Farms Sweet Hot...a friend of my mom's gives everyone Hickory Farms baskets for Christmas, we're the only ones that like them so we get it all. Regular Heinz catsup, a chipolte I made with Heinz ketchup and Chipolte tobasco. Oh, and a curry catsup I got in a German shop in Seattle. When it's gone I'll make my own. Too many half bottles of bbq sauce to mention.

I forgot to mention a Heinz ketchup factoid: the "57" on a bottle of Heinz is located in the precise location they recommend hitting the bottle to get the ketchup to flow.

At home I use the squeeze bottles. If I am in a diner, I stick a knife in the bottle to get the flow going.

ive tried making my own sauce using worchestishire(yeah the spelling) sauce,mustard and some other random things.i think one of them was lemon.i had it right and thought i could improve it,then fucked it up and threw it away.but i guess thats part of the fun of coming up with your own stuff.
