Being a digital reproduction it should be exactly the same playback quality as the original. So should a DVD-R/+R.
The real problems with DVD-R/+R are compatibility issues with some players and the fact that the discs themselves tend to be much less durable than pressed ones. They are very easily made unplayable by scratches and vulnerable to dye deterioration problems, especially if left exposed to sunlight.
Also, as you noted, the producers often have to make sacrifices in features and/or video quality to fit everything on a DVD-5.
