I dunno what I just made, but it was great. I cooked some bacon in a large non-stick fry pan and then threw some whole small yellow potatoes in and covered the pot and let that cook for half an hour or so while I watched football, occasionally stirring it. I also added garic salt, onion powder and red chili flakes as well as salt and pepper. When the potatoes where soft, I dabbed out most of the bacon grease with a paper towel and smooshed the potatoes down until the whole thing was a flat disc. Then I mixed in some green onions and white cheddar and mixed that up for a bit and let it cook. Finally, I poured in a whole container of SouthWestern Egg Beaters and mixed that up until it started to set. I turned up the temp to form a crust for a bit, covered it and took it off the burner to set while watching more football. It was great.
