NYC does it one better and offers coal fired pizza from ovens dating back to the early 1900's. Honestly, wood-fired and coal-fired pizza ovens do make the best pizza, but that "Wood Stone" shit I posted above is purely a gimmick. It's as good as having a fake fireplace at the back of an electric oven. They use an infrared burner under the floor of the oven so the bottom of the crust cooks. Lol.
