For as long as I've been on this mostly raw vegan trip, I STILL don't have proper knife skills. I'just wing it when it comes to cutting vegetables, and I'm sure there's a more efficient way that real chefs know. Do tell! I'm most interested in tomatoes, cilantro, garlic, onions, green peppers, and squash.
Also, for dicing, what kitchen gadget do you guys like? Bonus if it's small or travels well. I can never seem to get it small enough when I dice with a knife.

We have a version of that "slap-chop" thing that works pretty well for dicing. Probably came from a Pampered Chef party
Yeah they'd have an equivalent. When you find them, look closely at how the handle/knob- the thing you whap with your hand- goes on the end of it's metal rod. If that handle/knob breaks off while your slap-chopping you'll get a metal rod through your hand. So if they got one for 4 dollars and one for 14, and the 14dollar job looks more substantial, you're probably better off with it.
For mincing garlic, I have something similar to a product called the Garlic Twist. You pop some peeled garlic in, close the lid and twist it back and forth a few times and it'll be perfectly minced. A trick for peeling garlic is to drop the cloves into a metal martini shaker and shake it for 20-30 seconds and it will peel it all.

Metal martini shaker, two metal bowls or cheap plastic bowls also work. Ceramics don't, really. Leave it to a Greek to have a secret shortcut for garlic. If things are going well, we eat about two pounds of the stuff a day. Americans are kind of pussies about garlic. You don't need a special machine to cut that shit, and it doesn't matter if your fingers smell like garlic anyway. Garlic smells great.
But to be honest, I buy mine pre-diced as well as whole. There are uses for both, and I use enough of it.

The Kitchen Aid version is probably sturdier. And it's not pitched on TV infomercials by the ShamWow guy, who got hauled in for beating up a hooker in Florida a few years ago.

That kitchenaid model does look to be more substantial than the slap-chop as seen on TV. I guess I don't dice enough garlic, because I've never seen a need to have a dicer just for that purpose.
It's probably a Greek thing, like the Admiral said. When I make Greek salmon, I use tons of minced garlic, plus olive oil, lemon juice, oregano, salt & pepper. Oregano is another big spice for the Greeks. My family still laughs at me because we played trivia once and I got a question about the worlds's most popular spice and I answered with oregano. A garlic press is also useful if you don't want the intense flavor of minced garlic. There's a Greek sauce/dip called Skordalia that uses crushed garlic, boiled potato, lemon juice and olive oil all crushed in a wooden mortar/pestle. We usually ladle it over a stew of white fish and potatoes.
Speaking of Greek spices, some asshole here was supposed to send me some a while back. Cough, cough!

What spices was this "asshole" suppose to send you? I may be able to send you when I go soon.
I'm not entirely sure. Some Greek spice mix from a particular southern restaurant, but I can't remember the details. You can send me whatever you want. Are you going for Greek Easter? I was thinking about it, but the direct flights to Europe from Alaska don't start until May.

I don't know if peeling skins is something you are interested in, but that is an interesting skill that is easy to learn. Watch a video and peel an apple or two every day for a week and you'll be proficient at it.

The tried and true claw grip is the way to go. Use your knuckles to guide the knife, and take your time. Done correctly, you cannot cut yourself. Speed will come.

It's really about practice and more practice and a properly sharpened chef's knife. I'm sure there are plenty of free videos on YouTube that demo proper technique but I am a fan of Rouxbe. Check them out.
