For as long as I've been on this mostly raw vegan trip, I STILL don't have proper knife skills. I'just wing it when it comes to cutting vegetables, and I'm sure there's a more efficient way that real chefs know. Do tell! I'm most interested in tomatoes, cilantro, garlic, onions, green peppers, and squash.

Also, for dicing, what kitchen gadget do you guys like? Bonus if it's small or travels well. I can never seem to get it small enough when I dice with a knife.
