I'm pretty sure when I cook vegetable sous vide they keep all of their nutrients. I say this because they're being cooked in a vacuum-sealed pouch, so there is nowhere for the nutrients to escape to. They keep their color this way too, rather than looking all dulled-out like when you oversteam veggies.
I've never eaten an all-vegan or raw diet, but for a while there I was doing a day or two a week of drinking only freshly-made Mean Green veggie juice. Some people swear by the stuff. There's a movie about it. "Fat Sick & Nearly Dead," I think.
I had a friend who was dating a total vegan for a while. She came to a BBQ and couldn't find anything to eat so she took a hot dog bun, filled it with potato chips and topped it with ketchup. She had a son that she was also raising to be all-vegan. Like her, he was pale, thin, sickly looking and half-retarded. I think no one ever told her that your brain is made up of mostly fat & cholesterol. I heard about some hippies a while back who fed their infant nothing but low-fat shit like granola and now the kid is permanently retarded directly from their dieting decision. Try living with that choice.
