Here's the recipe. It's actually one of the more simpler stuffed PC recipes out there. But it's good.

Here's what ya' need

*Two butterfly chops
*olive oil
*about 3/4 cup of fresh Spinach Leaves
*2-3 Granny Smith apples, peeled
*5-7 strips of thick-cut bacon
*2-3 shallots
* 1-2 cups shredded Jack cheese depending on how cheesey you want it.


*Chop up the shallots, dice the apples, chop up the Spinach, mix them together in a bowl and put it aside.

*Cook the bacon, then chop it and add it to the apple/shallot/Spinach mix.

*Drain the bacon pan, but leave 2-3 tablespoons of bacon grease in the pan. Saute the apple/shallot/bacon mix in the remaining bacon grease until everything is slightly soft. Make sure the apples still have a slight crunch, as the oven will take care of softening them up thoroughly.

*When that's ready to go, dump the cheese in and stir it around until it melts and everything is nice and binded.

*Seperate the mix in half.

*Stuff as much as that shit as you can in each pork chop. Fold over, and toothpick those fuckers.

*Drizzle olive oil and whatever seasoning you wish on the tops of the chops. I use Sweet Basil and crushed Sea Salt.

*Bake those fuckers at about 350 until internal temp reaches 164-170.

*Enjoy.

The original recipe called for Fontina cheese, but I aint spending nine fucking dollars on a little wedge of cheese. Jack works perfectly for about a a fourth of the price. If your one of those rich mens, go ahead and bust out the fontina and tell me how it was.

I added the spinach to the recipe. It doesn't do much more than add color and help the rich mixture digest a little easier.

WARNING
Between the shallots, spinach, and apples, these chops will give you THE FARTZ.
