The outside is crunchy, the inside is soft. I don't find them cheesy, but very sweet. My mom used to make cakes with "cannoli" filing she made herself [she grew up in Coney Island's Italian neighborhood, and is married to a 1/2 Sicilian 1/2 Chassid, which fits her influences].
