They are tax exempt, but you aren't. You are the buyer, so you have to pay the sales tax. And, you get the tax write-off for donating to them.
Now, when I buy for a tax-exempt institution, I show the numbers and don't pay the sales tax, no matter who I buy from. Sales tax is really buyer's tax.

Alex's "all I care about is myself" thing is right in line with conservative/liberatarian ideas of Adam Smith and the invisible hand. But, if you read Adam Smith, you will find out even he recognized wide open free market won't work, some regulation is needed, and some things must be done by society as a whole (government).
