If you really want to quiz somebody to find out about their job, you don't ask what is taught in school, you ask what you have to learn on the job outside of the classroom. Practical and procedural things only somebody who does that job for a living would know. The problem, of course, is that those types of questions can only be constructed and "graded" by somebody who does that job for a living also.
