I've only used beer to cook with twice. One time I added one bottle of tripel ale to chili and it was good. Another time I made 3 loaves of beer bread. I used a different beer in each loaf. Yuengling Lager, the tripel ale again and I "borrowed" a can of budweiser from an Uncle. After baking the lager and ale bread was very hoppy abd bitter...more so than the actual beer tastes when you drink it. The budweiser loaf was actually pretty good. I generally hate budweiser but I guess the "sweetness" of the Budweiser covered up the hops in the bread and no bitter taste at all. The recipe actually did specify "your choice of cheap beer".
