Having worked in foodservice, I know there's a cut of meat called Flapmeat. But if you look closely at the label, under "Flapmeat," it reads: "Beef Bottom Sirloin Buttflap Meat." When you order Mongolian Beef at a chinese restaurant, that's most likely what you're eating. Enjoy!

...working in foodservice fuckin' RULES! Sometimes I miss the brainlessness of it...and the tips from the ladies.

Foodservice is interesting, but the flapmeat thing is stuck in my head forever. Imagine: "We hand-rub a special blend of savory spices into our Beef Bottom Sirloin Buttflap Meat and then pound it hard until it's tender and ready for the grill. Then we sear it at 700°. But don't worry. We serve it medium-rare, so this buttflap meat will still be pink in the middle."

Dirty must be asleep at the wheel he hasn't mentioned this one.
