Foodservice is interesting, but the flapmeat thing is stuck in my head forever. Imagine: "We hand-rub a special blend of savory spices into our Beef Bottom Sirloin Buttflap Meat and then pound it hard until it's tender and ready for the grill. Then we sear it at 700°. But don't worry. We serve it medium-rare, so this buttflap meat will still be pink in the middle."
