My girlfriend drinks wine every day: before dinner with dinner and after dinner. The difference in cost could be as simple as the label, and but most of the time it's something to do with the harvest, a particular year could yield an exemplary grape that's tannin/acidity/fruit/sweetness is either in perfect harmony or it's a young wine that has the potential to be in perfect harmony in the future. It's also about personal taste. My girlfriend for example loves Pinot Noir and can't stand merlot, but I can't tell any difference.
BTW: putting the $3 wine in a bottle that costs $300 will definitely not work. Most wine drinkers have very specific taste and very personalized selection and will tell just from the smell alone. Also, the price really isn't an indicator of shit.
