I carried a ceramic knife for almost a decade. They're expensive and can't be sharpened by most people.

The problem is that the handle will usually set off a metal detector. You need to make sure the handle is completely non-ferrous before you can be sure is suitable for airplane carry.

PS. Ceramic blades are also very brittle so be careful around the vertebrae.
