Baked Chicken Curry
Very Good GNK-adapted from Gupta, Lal & Singh's "Let's Eat Indian"
CHICKEN 1 medium, skinned and cut into serving pieces
YOGURT 0.5 C
ONION (YELLOW) 2 grated, drained
GINGER 1 t fresh, grated
TURMERIC 1 t
CAYENNE PEPPER 1 t
CUMIN 0.5 t ground + 0.5 t whole, divided
SALT 2 t
GARAM MASALA 0.5 t
CLARIFIED BUTTER (GHEE) 2 T
POTATO 3 medium, peeled and cubed
Mix the chicken pieces with the yogurt, onions, ginger, turmeric, cayenne, ground cumin, salt and garam masala. Leave to marinate
for at least 30 minutes. Heat the ghee and fry the potatoes until golden brown. Remove from the pan and put to one side. Fry the
cumin seeds in the same oil for 2 minutes. Pour the chicken and marinade into a flameproof casserole, mix in the cumin seeds and
fry for 3-4 minutes. Arrange the potatoes over the chicken, cover and bake in a preheated oven at 325 degrees for about 1 hour until
the chicken and potatoes are tender. Serve with rice.
Note: to prepare on stove top, add 1 C water when adding the chicken and marinade to the casserole. Simmer over low heat for
about 1 hour until the chicken is cooked.
