Dorito Chicken
INGREDIENTS:
2 to 3 cups diced cooked chicken
1 cup sour cream
1 can cream of chicken soup
1/4 cup finely minced onion
1 tsp. chili powder
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
1/2 cup grated Cheddar cheese
1/2 cup grated Mozzarella cheese
1 bag (medium size) bag of Doritos, crushed
PREPARATION:
Grease or spray a 2-quart casserole dish. Cover bottom of casserole with half of the crushed Doritos. Mix all other ingredients , except cheese ,and place on Doritos. Put remainder of crushed Doritos on top of this.

Add cheese on top. Ready to bake ! Bake at 350° for 30 to 40 minutes.

not quite funyuns, but certainly in the coated, deep-fried onion family of foodstuffs from which i rarely stray. tonight:

penne and smoked sausage casserole

2 c. uncooked penne pasta
1 lb. smoked sausage, cut into 1/4 inch slices
1 1/4 c. milk
1 can condensed cream of celery soup, undiluted
1 1/2 c. cheddar french-fried onions, divided
1 c. shredded mozz. cheese, divided
1 c. frozen peas

cook pasta... brown sausage...
combine milk and soup. stir in 1/2 c. of ff onions, 1/2 of the cheese, the peas and the sausage. add cooked pasta. transfer all to a 13x9 baking dish. cover, bake at 375 for a half hour, til bubbly. sprinkle with remaining cheese and onions, and continue baking uncovered until cheese is melted.

Taco To-Go, aka "walking taco"
Ingredients:
1 small bag of your favorite flavor of Doritos
1/2 cup shredded cheese
1/2 cup shredded lettuce
1 tablespoon of sourcream
1 tablespoon of salsa

Without opening the bag, lightly crush the Doritos. Cut a slit longways down the seam of the bag, so that you open it into a "pouch." Add all of the ingredients and stir. All ingredients are optional and you can add any other toppings that you'd like. This is a great snack to send your kids to school with.

Bologna Cups
This hearty meal goes well with sports.

Preheat oven to 350 degrees.

Line a muffin tin with bologna slices (red ring removed).
Crack an egg into the center of each bologna cup.
Sprinkle each with salt and black pepper.
Bake until firm.

Add a slice of American cheese to each cup and bake until melted or you can broil cheese.

Serve with beer and tobasco.

they served "walking tacos" at my high school for lunch like once a month. they added some kind of spicy ground meat to it, though. i'd never make that, though. for some reason, taking the chips OUT of the bag (at least) makes me feel less guilty.
