The longest blade I have is 10" and it worked fine with that. One change with the latest system vs. previous ones is with the vise. Both sides open and grip the blade, whereas with past systems only the right side would open and that caused the right and left side to have a different angle for the blade edge. Now there is perfect symmetry. Gotta get a 12" slicer for them hams.

My Jeep got smashed last week. Some guy just turned right in front of me while I was in the intersection. He claims he never saw me until I was about to hit him. I had the right of way and he admitted fault. It was a really solid impact directly on the front on the right side. My steering is knocked out and it's just sitting in the driveway all sad looking. I'm kinda hoping they just declare it totaled and haul it away. I'm all edgy driving around now, expecting someone else to do something dumb.

I gotta stop buying fancy chefs knives. This is a Japanese Gyuto, 240mm with a hammered pattern on the blade. It's perfectly balanced, surprisingly light, and wicked sharp. The hammering is also functional, helping to keep food from sticking to the sides of the blade. I fucking love this knife.

Apparently I got drunk and ordered a new, totally wireless meat thermometer set for $218. The MEATER. It's from a kickstarter campaign that has almost $1.8million in funds so far, so hopefully they'll release the damn thing soon. When I ordered, the website said it would be shipping in March. I also sliced my thumb open quite nicely with that new knife. I need to create a whole new Things To Not To-Do list for when I'm drinking.

Went to the National Wildlife Turkey Fed. banquet tonight. Meal was brisket and chicken tenders with Mashed potatoes, green beans, rolls and a really rich chocolate turkey cookie. Imagine a turkey with tail fanned out on a big ass cookie. I renewed my membership and bought raffle tickets on some guns and other stuff. Didn't win but one of my gal pals won an over under shotgun. She won a .223 rifle last year lucky ass. Spent 80 bucks.

Conceal Carry Gun Permit: $20
I'm thinking about selling my Keltec Sub2000 9mm carbine(1st Gen). I don't go shooting very often and its considered a long gun in PA so no FFL required for the transfer. A buddy offered me $300. I'm on the fence. I havn't been shooting with it in almost 10 years. On the other hand it would be a handy urban combat weapon when the anarchy comes.

I've sold a bunch of guns I wasn't shooting much back to the gun store in the past few months. I have a few I carry daily and the rest are just for range fun. If the SHTF a gun is a good trade item for food and other things just in case so I never feel guilty about my hobby. I rarely sell a gun to an individual unless its family or a close friend. My collection is actually down from a few years ago. I am drawn to older guns and especially WWII and Korean war weapons. Lot of history there. I've never drawn my carry weapon and sincerely hope I never have a need to. I stay concealed and never open carry.

I just received a 12" Victorinox Scimetar and a sampler pack of uMai dry aging bags. Picked up a whole 12 pound sirloin, USDA Prime, for $4.50/lb. I'll know in 3-4 weeks if the bags were worth the money.

I remember when i was a kid all the beef from our butcher was aged. My pop liked everything rare. Many Sunday nights after a roast beef dinner i woke up in the middle of the night to unlesh fury in the toilet.

Who makes the second knife from the left on your new rack there?
Is that honing steel ceramic?
I just received a 12" Victorinox Scimetar and a sampler pack of uMai dry aging bags. Picked up a whole 12 pound sirloin, USDA Prime, for $4.50/lb. I'll know in 3-4 weeks if the bags were worth the money. That shiny knife is made by Shun. It's part of their Bob Kramer replica series. I got it as part of a set a long time ago and I'm not sure if they still make them. It's made from steel that I previously referred to as "chippy." I ground out a couple of chips and sharpened it up again so it's back in usable condition. Bob Kramer is maybe the most famous maker of chef's knives in the world and the problem with the Shun knife is that they got the blade profile totally wrong. The first knife on that rack is a new Bob Kramer replica by Zwilling Henckels and has the correct profile. It's also made from carbon steel rather than a type of stainless, so it reacts with certain foods and gets discolored, but oh well. And yeah, that's ceramic honing rod. I think it was made by Dexter-Russell. I'm curious how your experiment with dry again goes, but $4.50/lb for any high end cut of beef makes me wonder if it hasn't already been "aged."

I've got a couple of Shun Classics. I thought I saw their logo on that knife. Shun's use a 16 degree edge, western knives use a 22 degree edge. I buy meat from that store all the time. It's been a family owned shop for over 75 years. Normally, if he cuts it out into steaks, it's about 9.95/lb. I'm not sure what the difference is between USDA Prime and Choice when it comes to sirloin pricing because finding sirloin in the regular grocery store is almost impossible around here. But if you take it whole, and still in the cryo-vac bag, he'll cut huge discounts. It's product that gets moved with minimal involvement on his part. I've never had a bad piece of meat from that store. I'll keep you posted on the outcome.

Bread, hamburger, butter etc.... snowstorm food. Its still fucking snowing. Another 5 in. last night. About a foot total. I had over a foot in my backyard at 8am this morning and its still snowing. I had to dig out an area for the dog to get out and go to the bathroom. The drifts were taller than him. I dug out an adequate sized area for him to do his business and he looked at me and indicated he wanted to go over in his usually spot on the far side of the yard. I said, "Fuck You" and he did his work in the area I shoveled for him. The snow drift at the bottom of my front stairs is up to my waist. At this point I'm not going shit besides digging doggie trails and potty areas till this shit stops which looks like another 6 hours or so.

Stopped here (east of dc) around 7 last night. At 7 this morning I was on craigslist looking for a snowplow. First one I called, picked up, told me he'd be over as soon as he gassed up and had breakfast. Less than an hour later he had my driveway clear. It's hard to say who has the better deal. Basically, anyone with a truck and a plow can get a contract with MD SHA to clear snow. I think they pay something like $100/hr. But they do everything by the book which means the taxman wants his cut at the end of the year. It cost $140 to get my driveway cleared, cash, under the table. Yeah you've got to hustle and knock on a lot of doors who tell you they're not interested, but if you can average 1.5 houses/hour, I'm thinking you can do alright.
Unfortunately I still have to go dig the cars out.

Years ago when I lived in a small town south of here I would make some good money when it snowed. The place I worked for let me use their tractor once I got their parking lot plowed. The best I did was about 3k over about 10 hrs of actual work. Could have made more but it was xmas eve and the wife was like "enough". Had a couple decent days over the next couple years then it pretty well came to a halt.
Fucking snow blowers.... you'd see trucks everywhere with two or three guys in it and two or three snow blowers in the back. Between them and the homeowners that had them there wasn't enough money to make it worthwhile any more.

In Knoxville Wed. for Dr. appt. [long story there too] I went to Lost and Found records and visited with Nathan, Mike and Maria and bought some lps. Keith Moon, The Who [Odds and Sods], The Impressions, Capricorn records compilation double album [Peaches] and Country Joe and the Fish Live. Spent about 45 bucks if I remember correctly.

That's a load of crap. The show is 3.5 hours long without a break and he crowd surfs during Hungry Heart. I got 6 tix because I want my friends to see him while the band is still at their best
