Mine is a great cook but her country doesn't celebrate thanksgiving. I took care of the duties last month (our thanksgiving is in October because our turkeys fly south for the winter) and I whipped up an appetizer an ex girlfriend used to make that kicks ass.
Do a batch of stuffing and form into meatball size. Wrap them in a strip of bacon, secure with a toothpick and bake it on a sheet until the bacon's cooked.
I also like to do a big batch of chicken wings and swedish meatballs at thanksgiving and Christmas dinners just to hold everyone over throughout the day until dinner is ready. Next month I'm doing beer can chicken using a turkey and a monster can of Foster's Lager for Christmas.
