If someone writes random data to a sector then no police lab is going to be able to figure out what used to be there. If you naively write 1's or 0's or anything predictable then maybe, but a PRNG like Yarrow can generate random data as fast as a hard disk can write so there's no advantage to 1's or 0's any more.
A military lab full of SQUID sensors might be able to find a "shadow" after a pass but not after a few writes.
