I think most unions deal with this by having the dues deducted from the paycheck by the company (this is in the contract with the company).

There is too much new porn fodder arriving every day to ever make for a union. Moreover it's too easy for new companies to start. Porn girls last about a year if they've had a productive career and that's about how long a union could last if all went well.
