No Stove Chocolate Chip Cookies:

Grind 1 3/4 cups cashews in a coffee grinder to make "cashew nut flour"
1/4 cup agave
2 tsp. vanilla
1/2 cup coconut oil
chocolate chips (blend 1/2 cup coconut oil, 1/2 cup carob, 1/2 cup cacao
put mixture in freezer, then chop into chunks)
--form into balls, roll in cashew "flour" and refrigerate

*coconut oil is sold in big glass jars for $15 at Whole Foods. It's hard but melts in 20 mins at room temp. Store at room temp; no need to refrigerate...it never spoils. I use it in place of cooking oil or Pam when cooking.
