Want easy good nutritious soup? Get a crock pot! SUPER easy! Get a cpl cans of crushed tomatoes (or blanch, peel and smush them yourself...I get canned because the tomatoes in FL tend to suck), toss it in the crock pot with veggies of your choice(I go with a little diced potato, chopped zucchini, chopped squash, string beans, carrots, a little onion, some peas and celery at least) then add a can (or again, you can get real and soak overnight) lentils, or my preference, kidney beans for fiber and turn it on high for @ 6 hrs. The last hr add a handful of ditalini pasta and presto...yummy minestrone!
