The Mexican place in the mall does a mean cooked-to-order chimichanga, and knowing that I would be missing dinner, I went for it.

As it takes 5 minutes to assemble and deep-fry, I leisurely prepared lil' takeaway plastic containers of cilantro and chile de arbol to mix with the provided dollops of sour cream, guacamole, and the traditional (and humorous nod to "health") shredded lettuce. And, as another nod to "health" chose chicken instead of beef.

BTW, it's not a Mexican invention (Mexico does not deep-fry) but rather something a restaurateur in Tuscon, AZ came up with a few decades ago...
